Cranberry Nut Dessert

My mother-in-law found this recipe in the paper and made it for us one night at their cabin in Colorado. It was very easy to make and tastes great. It is especially good served hot with a scoop of good quality vanilla ice cream on top.

Ingredients

1 cup flour
1 cup sugar
1/4 tsp salt
2 cups fresh cranberries (fresh is better, but you CAN use frozen)
1/2 cup chopped walnuts
1/2 cup butter, melted
2 eggs, beaten
1/2 tsp almond extract

Instructions

In a large bowl, combine the flour...
the sugar...
the salt...
the cranberries and the walnuts.
Mix the dry ingredients together.
In a separate bowl, beat two eggs together. Pour the eggs into the dry mixture and combine.
Melt a stick of butter, pour into the mixture and combine.
Add the almond extract and stir until just combined.
Spread the batter into a greased 9-inch pie dish, or like in my case, a 9-inch flower shaped non-stick pan with removable bottom.
Bake in a 350 degree oven for 40 minutes.
Remove from oven and let cool for a few minutes before serving.
