Grandma Esau's Zucchini Bread

My old college roommate's grandmother made the best zucchini bread ever. This is her recipe (although she did it all on the fly when baking). The one missing ingredient is Grandma Esau's magic touch.

Ingredients

3 eggs, beaten until foamy
2 cups grated zucchini
2 cups sugar
1 cup vegetable oil
1 tbsp vanilla
2 1/2 cups flour
1 tsp salt
1 tsp baking soda
1 cup chopped nuts (I use walnuts)

Instructions

Beat the eggs until foamy.
Beat in the sugar...
and the vanilla.
Mix in the grated zucchini and the oil.
Pour in the flour, salt, and baking soda. Stir until just mixed.
Add the nuts last.
Pour the batter into 2 greased loaf pans.
Bake at 350 degrees F for an hour or until a toothpick comes out almost clean (want moist crumb stage).
