Apple Cranberry Crisp

Background

I found this recipe on the web one day while I was looking for something interesting to do with fresh apples and fresh cranberries.

Recipe

Filling

5 Granny Smith apples, peeled, cored and sliced thin
1 cup fresh or frozen cranberries
2 tbsp sugar
2 tbsp light brown sugar (packed)
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
2 tbsp unsalted butter, melted

Topping

1 1/4 cup flour
1 cup rolled instant oats
1/2 cup sugar
1/2 cup light brown sugar (packed)
3/4 cup unsalted butter, soft

Preheat oven to 350 degrees F. Butter a shallow 9x13 baking dish. Combine the filling ingredients until fruit is evenly coated. Combine topping ingredients in another bowl and cut the butter into the dry ingredients until coarse crumbs. Pour fruit into baking dish and spread evenly. Sprinkle the topping over the fruit. Bake for 35-40 minutes or until fruit is soft.

Notes

This is excellent served warm with good (french) vanilla ice cream.
