Chicken Coconut Soup

Background

This is my lazy version of Chicken Coconut Soup.

Recipe

2 cans chicken broth
1 can coconut milk
juice of 1 lemon
1/2 cup fish sauce
6-7 slices of ginger root (peeled)
6-7 slices of lemon grass
1 chicken breast, sliced thin
8-9 dried chinese black mushrooms, rehydrated, rinsed and sliced thin
1 tsp chili sauce (asian chili sauce)
2 tsp hosin sauce
cilantro, chopped (optional)

Combine broth, lemon juice, fish sauce, lemon grass and ginger root in a pot. Bring to boil. Add chicken and mushrooms. Let return to boil. Add coconut milk, chili sauce and hosin sauce. Stir well and return to boil. Serve hot with cilantro on top.
