Cornflake Chicken

Background

I got this recipe from my ex-boyfriend's mother.

Recipe

4 chicken breasts
2 cups crushed corn flakes
4 large pats butter

Wash chicken breasts and pat dry. Press crumbs on chicken breasts until both sides are well coated (you can use milk or egg white to get it to stick better). Place chicken in greased baking pan and place a pat of butter on each breast. Bake at about 350 for 25 minutes (or until chicken is no longer pink).

Notes

Don't over cook! Chicken should be moist and juicy. I throw in a test piece so I can check the progress... It can be a little dry, but I find some extra butter and just a little less cooking solves that problem. Oh yeah, and I dip the chicken in egg or milk before rolling it in the flakes.
