Cranberry Nut Dessert

Background

My mother-in-law made this over the holidays in 1999 while we were in Pagosa Springs, CO. It is simple, easy to make and delicious.

Recipe

1 cup flour
1 cup sugar
1/4 tsp salt
2 cups fresh cranberries (fresh is much better!)
1/2 cup chopped walnuts
1/2 cup butter, melted
2 eggs, beaten
1/2 tsp almond extract

Combine flour, sugar, salt. Add berries and nuts; toss to coat. Stir in butter, eggs and extract. Spread into a greased 9-inch pie plate. Bake at 350 F for 40 minutes.

Notes

You can substitute dried fruit for the cranberries successfully. I tried this with chopped dried apricots and chopped almonds instead and it was great.
