Darling's Pasta

Background

This recipe comes from Jeremy's dad, Bill Darling.

Recipe

16 oz chili pepper rotini
2-3 chicken breasts (optional)
1 cup roasted bell peppers, chopped
2/3 cup sun-dried tomatoes, rehydrated and chopped
2/3 cup pine nuts
3 tbsp pesto
4 cloves garlic, crushed (to death)
1 tbsp olive oil

Boil the pasta until done. Drain and set aside. Boil chicken until done, then drain, cube and set aside. In a frying pan, heat the oil and garlic until the garlic starts to sizzle. Then add the chicken, peppers, tomatoes, pine nuts and pesto. Stir around until you can smell the garlic. Toss with the pasta and serve.

Notes

I also like to substitute the chili pepper rotini with cheese tortellini.
