Egg Drop Soup

Standard recipe from my family.

Recipe

2 eggs
2 cups chicken broth (or vegetable broth)
2 tsp green onions, finely chopped
3 Chinese mushrooms, sliced

Soak dried mushrooms in hot water (just boiled) for about 10 minutes; rinse; squeeze dry and cut stems off. Slice. In small bowl, beat eggs; set aside. In medium saucepan, bring stock to a boil. Slowly pour beaten eggs in while stirring stock. Cook 1 minute. Place onions and mushrooms in bowls, add soup. Serve.

This soup is incredibly quick and easy to make.
