Guacamole

Background

I threw this recipe together based on a lot of recipes from the internet, books and also from watching my friend Melinda make guacamole at her house (with fresh avocados and lemons from her yard). Fresh ingredients make all the difference.

Recipe

4 ripe Hass avocados, mashed
1/8 sweet Vidalia onion, minced fine
1 medium tomato (ripe), deseeded and minced fine
1 jalapeno pepper, deseeded and decored, minced fine
juice of 1 lemon
1 clove of garlic, mashed with salt
salt to taste

Combine ingredients in a bowl and mix thoroughly. Add salt to taste (lemon and garlic will also depend on your tastes). If not serving right away, cover the guacamole with plastic wrap literally touching the surface with no air pockets. This keeps it from browning. Serve with tortilla chips.
