Lemon Bars

Background

I found this recipe online. It comes from the Sugartree Bed and Breakfast in Warren, Vermont.

Recipe

2 sticks unsalted butter, softened
1/4 tsp salt
1/2 cup confectioner's sugar
2 cups flour
4 eggs, slightly beaten
1 tbsp grated lemon peel
5 tbsp lemon juice
2 cups sugar
1/4 cup flour
additional confectioner's sugar

Preheat oven to 350 F. Mix butter, salt, 1/2 cup confectioner's sugar and 2 cups flour in a mixer or food processor until soft dough forms. Press evenly into an ungreased 9x13 inch pan. Bake 15 to 20 minutes until golden. Remove from oven. Reduce temperature to 325 F. Meanwhile, combine eggs, lemon peel, lemon juice, sugar, and 1/4 cup flour and beat until smooth. Pour over baked crust. Bake 25 minutes until firm. Dust with confectioner's sugar and slice.
