Easy Peanut Sauce

Background

My mom taught me to make this sauce for the Chinese Cold Noodles recipe. We actually make the peanut sauce, then sprinkle soy sauce, sesame oil and red wine vinegar on the noodles and mix it all together. Here, I just mix everything with the peanut sauce. It's great on a salad or for dipping.

Recipe

1/4 cup creamy peanut butter
1/4 to 1/2 cup boiling hot water
soy sauce to taste
sesame oil to taste
red wine vinegar to taste
asian chili sauce (or paste) - optional

Place the peanut butter in a bowl or a sturdy measuring cup. Pour in 1/8 cup of hot water and stir until paste is smooth. Add more water a little bit at a time and mix until desired consistency is reached. Flavor with soy sauce, sesame oil, vinegar and chili to taste.
