Spicy Roasted Potatoes

Background

I threw this one together one night for lack of anything better to do with the baby red potatoes. Great with ketchup on the side.

Recipe

2 lbs baby red potatoes, washed and quartered (or cut into eighths if they are large)
1 tbsp olive oil
1/2 tbsp chili powder
1 tsp paprika
1 tsp cayenne pepper (or less if you don't like it too spicy)
1 tsp sugar
salt to taste
pepper to taste
1/4 cup onion, diced (optional)
1/4 cup green pepper, diced (optional)

Toss all ingredients until potatoes are evenly coated. Pour potatoes into a greased baking dish and spread out evenly in pan. Bake at 425 for 30 minutes.
