Tiramisu
BackgroundEver in search of a good tiramisu recipe, I found this one on Williams-Sonoma's website and promptly modified it. The reason I like this recipe is because it heats the egg yolks to a safe temperature rather than using straight raw yolks.
Recipe
3 pkgs lady fingers (Trader Joe's brand)
4 cups hot brewed espresso For a 9x13 baking dish. For filling: place egg yolks, sugar, kahlua and salt in a double boiler. Set double boiler over simmering water and whisk for 6 minutes until thick and leaves ribbons. Remove and set on ice to cool. Stir occasionally. Mix mascarpone and cream in bowl then beat until stiff peaks. Fold into egg mixture. In baking dish: dip each lady finger into espresso and layer a single sheet on the bottom of the pan. Spread just under half of filling over lady fingers. Dust with cocoa. Repeat. On last (3rd) layer of the lady fingers, spread last bit of mascarpone thinly then dust with cocoa. Serve chilled.
