Wild Rice and Mushrooms

Recipe

1/2 lb Trader Joe's wild rice trio
16 medium sized mushrooms (fresh), chopped into thick slices
1/4 cup onions, coarsely chopped
5 tbsp vegetable oil
1/2 cup chicken broth*

Boil the rice as instructed on the packet. Usually I put twice as much water as rice and let it boil for about twenty minutes or until the rice is soft enough to eat. Keep an eye on the rice when it boils because you should add more water when the level gets low. When rice is done drain it and set aside.

Heat 3 tbsp oil in a frying pan or wok on high (frying pan should have at least 1 1/2 inch sides) when the oil is hot add onions and stir about so they cook evenly and flavor the oil (careful of splatters!). When onions begin to look translucent add mushrooms and stir fry until mushrooms are darkened in color (no longer look dry). Remove onions and mushrooms from pan and set aside.

Now heat last 2 tbsp oil in frying pan (still high heat) and when oil is hot add rice. Stir fry the rice for two minutes and then add the mushrooms and onions. After another minutes or so pour in chicken broth and let simmer - continue to stir from time to time. Add salt to taste. After five minutes remove from heat and serve.

Notes

If you don't drink chicken broth - you can substitute with vegetable broth.
