Grandma Esau's Zucchini Nut Bread

Background

This recipe is from an old roommate's grandmother. Everytime my roommate went home to visit her grandmother, she would bring back two delicious loaves of her Zucchini Bread. I finally asked for a recipe and got her grandmother's "estimates" since she never uses a recipe or measures when she makes this bread. No matter what I try, it still never turns out quite as good as Grandma's.

Recipe

3 eggs - beaten until foamy
2 cups grated zucchini
2 cups sugar
1 cup vegetable oil
1 tbsp vanilla
2 1/2 cups flour
1 tsp salt
1 tsp baking soda
1 cup chopped nuts (I use walnuts)

Beat eggs, add zucchini, oil, vanilla and sugar. Mix evenly. Add the rest of the ingredients (nuts last) and mix well. Pour into two greased loaf pans. Bake at 350 F for 1 hour or until toothpick comes out clean. Makes 2 standard loaves.
